This winter, The cookery school will focus its classes on making meals using the very best locally available foods. We’ll show you just how creative you can get with the 100 mile diet.
Each week, we’ll choose a menu, and all the classes that week will be identical. Classes are Wednesdays from 5:30 – 8:30 pm and Sundays from 10:30 am – 1:30 pm. Additional classes may be available and will be listed each week.
Deconstructed Irish Stew

This class is all about focusing on a simple but popular dish: Irish stew. We’ll take a look at how we can make all of those flavours stand out. And since it’s about time for St. Patty’s day, we’ll finish with a Barley Days Wind & Sail cake with a Bailey’s crème anglaise.
Maple In The County

Maple in the County celebrates Prince Edward County’s maple syrup producing community. In celebration, we’ll be making a maple-licious meal including roasted celery root and maple salad, mini tourtière and maple butter tarts.

The county produces an abundance of Chicken, so our series on local foods wouldn’t be complete without a chicken class. We’ll make chicken consommé, flattened chicken with Yukon mash potatoes, house-made buns, and apple pie with dulce de leche.
