Guest Chef Chris Byrne will be collaborating with the talented chefs of the Waring House to put on a multi-course plant based extravaganza in Waring Hall, as part of Maple in the County.
The meal is called "Sap :an ode to the maple tree" and as usual it will offer some interesting perspectives on both plant based cuisine and using maple trees to make a meal delicious!
Chris Byrne has been a plant based chef for 20 years. He trained under Cornelia Aihara at the Vega institute in California where he learned both traditional and contemporary Japanese culinary techniques. He studied raw cuisine in California, and B.C. and has been the chef at a variety of plant based restaurants, including Fressen in Toronto, along with running his own catering company for many years. He has trained in Indian cuisine, and worked as a baker and pastry chef in fine dining. He has a great passion for harvesting and preparing local wild foods.
Now living on a farm in Prince Edward County, Ontario, he is excited to combine all of his experience with the “Bounty of The County,” and create newly inspired dishes that delight the senses. He takes great joy in sharing his experience with, and passion for vegetables!
