Step into one of Prince Edward County’s most beloved historic gems. The Waring family, led by the patriarch Joshua Waring, arrived from County Waterford, Ireland, in about 1820.
The family were Quakers and joined the area’s already established Quaker Society of Friends, who had left America with the Loyalists during the War of Independence. The Waring Family farmed their 200 acres of land for more than 100 years.
The part of Waring House housing the Barley Room Pub was built sometime around the arrival of the family, while Joshua’s son, Thomas, added the larger part of the house in 1860. Hugh Smith was the stone mason at the time. He had emigrated from County Down, Ireland, and his descendants still reside in Prince Edward County.
Furnished to reflect its 19th-century roots, the historic rooms echo the charm and romance of a bygone era while serving a new role as a country inn and carrying on a rich heritage of Irish hospitality.

Waring House was first opened to the public as a restaurant in 1981. In 1995, it was reborn as a country inn, independently Canadian-owned and operated by Christopher and Norah Rogers. Lodges, built in 2008, offer a modern, more spacious and luxurious twist with views overlooking the peaceful country grounds and the Millennium Trail. The property also features a restored stone ice house turned into a lovely cottage for private romantic getaways, and The House Next Door, a restored and renovated 19th-century board-and-batten farmhouse.
Our goal has always been to create a truly special place where every element comes together to provide a memorable experience for our guests: a treasured historic setting, a rich oral tradition visitors can connect with, and a destination that proudly celebrates Canada’s past and present. We are committed to showcasing Canadian artists, artisans, farmers, and food producers, while our culinary team embraces a genuine farm-to-table philosophy.
At the heart of it all is a dedicated staff who genuinely care about guest satisfaction, understand the value of authentic hospitality, and recognize the important role tourism plays in supporting the broader community.
We appreciate our guests, the locals, our ghost, and all who create ‘Waring moments’ of pure enjoyment again and again. Our sincerest wish is that you will experience all the elements of Waring House and take home the happiest of memories and a desire to return.
The Waring House Culinary Philosophy
Our Culinary philosophy celebrates the bounty of Prince Edward County. In keeping with this, dishes are prepared daily in our kitchen from locally sourced ingredients whenever seasonally possible. Vegetables and herbs are harvested from our very own onsite gardens when in season, or from market gardens in the immediate area or from suppliers who source from Ontario when possible.
Waring House is proud to be a Feast On® certified property. Feast On® is North America’s largest and longest-running local food certification program. It recognizes businesses committed to sourcing Ontario-grown food and drink with purpose: they’re supporting Ontario’s farmers and producers who work the land in ethical and sustainable ways; they’re avoiding energy waste from transporting products from afar; and more. See more at www.culinarytourismalliance.com.
We are proud to support local beverage producers. We encourage you to pair your dinner with Prince Edward County wine, beer, cider and liquor.
We celebrate the hard-working local farmers, fishermen, and beverage producers who supply us year-round or, when possible, seasonally. We source from local businesses such as Blaine Way Farm, Cressy Mustard, Creasy’s Apple Dabble Farms, Huff Estates, Leavitt’s Black Angus Beef, County Cider Company, Campbell’s Orchards, Hagerman Farms, Honey Wagon Farm, Langridge Farms, Laundry Farms, MPH Fisheries, Prince Eddy’s Brewing Co., Rosehall Run Vineyards, Sandbanks Bees, Vader’s Maple Syrup, and many more.
Our culinary team, led by Executive Chef David Correa and Chef Jessie Insley, creates delicious pub fare for the Barley Room Pub and refined regional cuisine for Amelia’s Garden Dining Room, as well as house-created menus for private and special events held throughout the year.
